It's especially difficult at this time of year, when dinner doesn't come out of the oven until after dark. Lighting is always the hardest part! You did well here, though -- crisp focus, nice detail and beautiful colors!

Dave, it's actually a flour-free pizza. I didn't make the meatballs myself (they're lamb and beef).

I use this recipe for the cauliflower pizza crust:. I end up using a whole cauliflower (they're possibly a bit smaller in Norway) in a 10" dish and double the added ingredients because I like having a thicker crust. Plain tomato paste on crust, then toppings.

BTW, Jarlsberg is good pizza cheese. :-)

It's become a new favorite, but because it does take a little time to prepare the crust/cauliflower, it's a dish I make only on weekends.

Silly me, I do most of my cooking only on weekends, anyway, living on leftovers the rest of the week. :-)

I have never heard of a cauliflower pizza crust, but it sounds delicious. Thanks Keera for including the link for the recipe. I'm going to have to try it. I have made a zucchini crusted pizza that is delightful - even a friend who dislikes zucchini thought it was good.

Leftovers are often the best part - good food and no work!

Cauliflower has the same advantage as tofu: It easily takes on any flavor you want. (Who knew?)
